CMYK can't replicate all colours, like very bright and metallic ones, and a huge part of RGB's ones. Pantones are used in printing, you can't really use RGB instead (for now at least, there is a company developing adding red, green or blue inks to a CMYK print to make it more punchy). Plus, the Pantone system is perfect for colours that needs stability, like on logos.
