Maybe a stupid question here, but why forego strength and defence for speed? U can hit alot harder, so wouldnt that be better?

I don't remember the exact numbers (and I'm too lazy to check), but I assume the slight strength/defense reduction isn't a huge deal.
Generally though, I think travel time is more important than making the actual fight a few seconds quicker. Lots of ground to cover in this game, you know?

So you play more for a speed run. However, if someone wanted to just annihalate the enemy, (which is normally my tactic, male would be better yes?

I'm not completely sure. Speed is pretty important for a cavalry unit, because I think it affects trample/charge damage. Also, if you clash with another unit, the faster one wins.
If you like to stand still and go toe-to-toe with enemies, then no doubt male wins. It doesn't really make sense to fight that way with cavalry though, you know?
