Since my recipes took years to develop plus I have a bakery and sell my sticky buns, bread, croissants etc. for a living, I like to keep control over the location of my recipes.

hmmmmmm! looks yummy! I've watched similar videos and they all proofed or set the rolls aside to allow rising before baking! How come you didnt have to do that process? Is it a special kind of dough?

you are correct! after rolling and cutting them into pieces, they proofed for 45 minutes before going in the oven.
