Our family has been looking for healthy recipes to add to our daily menu.....steering away from a lot of DAIRY products as well as GLUTEN.
During our first week of DEToX...daddy couldn't stand being without "BREYERS" Vanilla Bean Ice Cream......so a visit to AMAZON (to buy an ice cream maker) and a few ingredients later and walla....amazing Coconut/Vanilla Ice Cream.
Tastes great by itself or with frozen blueberries, cinnamon, raw almonds and honey......mmmmmmmgood....needless to say, Daddy won't be going back to Breyers.
Maddie loves it so much that she wants to "HELP" every time we make it so we decided to make this fun video for y'all.....

LOOK NO FURTHER - Amazing Coconut/Vanilla Ice cream
First, we bought the Cuisinart Ice Cream Maker ICE-21 - http://www.amazon.com/gp/product/B0041A3KPC/ref=ox_sc_act_title_2?ie=UTF8&...
Ingredients and where we bought them:
1 Can (14oz) - "Golden Star" Coconut Milk / Green Can (WALMART) $1 and change
1 1/4 Cup - "SO Delicious" (DAIRY FREE) Coconut Milk/ Green packaging (Whole Foods)
1/2 Cup - "365 Brand" Raw Organic Agave Nectar - (Whole Foods)
1 Tablespoon - "SPICE ISLANDS" Pure Vanilla Extract / No Corn Syrup
Step 1
Mix all ingredients together in a glass bowl
** If "GOLDEN STAR" coconut milk is thick and clumpy then:
1. Boil Pot of Hot water
2. Place Glass bowl with all your ingredients on Pot and stir till
the mixture has been thinned out
Once stirred, place Plastic Wrap over Glass bowl mixture and put in Fridge for 2 hours.
2 HOURS LATER: ;-)
Step 2
Take ICE-21 FROZEN CONTAINER out of the freezer (should have been there 12-24 hours)
and place it on the ICE-21 BASE.
Put plastic mixer piece in the frozen base. (Circle side facing up)
Place outside clear container on last. (LOCK into place)
TURN IT ON!!!!! grrrr.....(need I give you instructions how to do that??)
Step 3
Pour your "2 HOUR CHILLED MIXTURE" into the open spout on TOP of the machine and watch your milky liquid become some of the best non-dairy ice cream you've ever tasted.
Set timer for 20 Minutes. Depending on how cold it is outside (ARIZONA, you need not worry about this one)....will depend on how fast your ice cream is made. On a cold day in Nashville, it took 15 minutes. You know it's done when the ice cream mixture stops churning and has a consistency of the soft serve you get at MCDONALD'S....but we won't be buying that garbage anymore RIGHT??? ;-)
Step 4
Now, you can either eat right away if you like softer ice cream and garnish it with your favorite fruits/nuts etc.....or if you like your ice cream firmer then
Scoup ice cream into a "1 quart" size "Freezer Friendly" Glass container. I.E. Pyrex or Anchor.
