If you didn't back up the apps and music and video when you did this but all that is saved on another computer will it still restore all that

So iTunes will backup everything? All apps, music, pictures, etc.? (If I have to reinstall all apps, I am blaming it on you!)
The second time everything comes back to normal.
Oh, and makes sure when you back up/sync that you set up in iTunes the elements that are being backed up/synced (apps, docs, music, video and so on)...

Yeap. iTunes automatically backsup your iPad before updating and then restores it. Personally I would back it up myself.
After update if your apps icons don't show up or the shortcuts are not arranged as before (it happened to me a couple of times) don't despair, just do a second restore from the same backup up.

go through each sync tab (images, apps,ebooks, files and so on) and check to see if you've enabled backup for them first

Backup your current iPad to itunes and try a device reset, then restore from the previous backup. Maybe it helps

try to manually drag them from the itunes menu onto the iPad 2 menu
