nakanaka=this is used with verbs to show that something is somehow not being accomplished
風邪がなかなか治らない。
Kaze ga nakanaka naoranai.
I cannot seem to shake this cold.
I cannot seem to get over this cold.
ダイエットをしましたがなかなか痩せない。
Daietto wo shimashita ga nakanaka yasena
I dieted but I can't seem to lose weight.

I studied a LOT OF kanji, but I cannot seem to remember them.

"Shimashita" and "shita" are both past-tense forms of "suru", the verb that means "do". "Shimashita", however, uses the polite "-masu" form/conjugation, and "shita" is just the plain, past version. Use the -masu form with people you're not super close to and where politeness is important ^_^.
