Cooking Cranberries
To cook fresh cranberries, combine the berries in a saucepan with water or juice and, in most cases, sugar. Bring the mixture to a boil over medium-high heat. Reduce the heat, and simmer, uncovered, 10 minutes or until cranberries begin to split or pop, stirring occasionally.
Cranberries are only in season from October to December, and there's just a small window of opportunity in which to get them fresh. They do freeze beautifully, though, so you can buy extra and store them in the freezer for future use.
