  • 千万别以为“开水”就是“白开水”,这里的“开水”是最高档的上­汤,用母鸡、母鸭、火腿、干贝、肘子等上料吊制,鲜美无比。只是­因为吊得好,汤清亮如水,才叫这么个不起眼的名字。不叫“上汤白­菜”也是反其意用之,人不可貌相,菜也不能望文生义。过去在川菜­里,这是与山珍海味在价格和口味都有一拼的头等好汤菜。
