The guy is talking about "physical aspect".
If you see someone like steven segal you would less appreciate the character in the movie because this actor is a bit overweighted not saying that he is not charismatic though but when you watch a bruce lee movie or van damme you appreciate more because of the aspect "muscled" well its a little advantage that counts in many art martial films of course.

He sais that diet is very important in action movies, so your body have to be shaped / cut on the screen, in order to be a model for the fans.
If you look fat like steven seagal it's not good.
If you see Bruce Lee, it gives you emotions and the need to become like him.It's a good exemple for the kids.
