Canning your own strawberry jam is simple and will save you tons of money.

This is the recipe I use, it makes about 8, (8 oz.) Jars:

7 Cups Sugar
5 Cups Mashed Strawberries (about 8 Cups Whole)
4 TBSP Lemon Juice
1 (1.75 oz) powdered fruit pectin

Add lemon juice and pectin to 5 cups crushed strawberries, bring to a full rolling boil over high heat, stir often. Add sugar and while stirring constantly bring to a full rolling boil that cannot be stirred down for 1 minute. Skim off foam. Fill jars. Process in a hot water bath canner for 10 minutes.

  • Wow, that was a lot of sugar : ) wonder how to adjust it for my frozen strawberries. They're really good as a nice thick layer between two waffles.

  • @Helioforge You can still use frozen strawberries, just thaw them first and then measure your 5 cups of mashed strawberries. Since they are frozen once they thaw they basically will be mashed already without you having to do hardly any work. I've made them with frozen berries before and it worked great.

  • Very good video! I am starting to see strawberries come out now in stores...I know its not from the garden. :-) I have no idea what homemade jam tastes like... I would think its alot better.
