The gear ratio on that thing must be insane. His cadance appears to be the same as that of the cyclists he was passing, but he was obviously covering much more ground per revolution, despite having much smaller tires!

what do you do when you have to stop?

When you want to stop pedaling, you simply stop pedaling and "coast". The ElliptiGO 8S has a standard Shimano 8-speed hub that "freewheels" so you don't have to pedal all of the time. Also, it comes with industry standard front and rear v-brakes that provide plenty of stopping power.
