Ok, this will be a my last cooking video for awhile, I promise :)

Ingredients:

Coconut Cream Pie

Pie Crust

9-inch pie pan
Preheat oven 425-450
Baking time 18-20 minutes

2 cups all-purpose flour
½ teaspoon salt
10 tablespoons shortening
6-8 tablespoons ice water

Add flour and salt, cut in the shortening. Add the water, and then mix with a fork. Once dough is formed into ball, dough may be chilled or rolled out at once. (Chilling before rolling gives a more flaky pie crust). Roll out pastry, using flour generously on board and rolling pin.
Place in pie pan - bake 18-20 minutes temperature 450


Coconut Cream Filling

½ cup sugar
5 tablespoons flour
1/8 teaspoon salt
¼ cup cold milk
1 ½ cups scalded milk
3 egg yolks
1 teaspoon vanilla
1-2 cups shredded coconut

Blend sugar, flour and salt with the cold water. Add scalded milk gradually, stirring constantly. Cook on Low heat until thick. Add beaten egg yolks, then cook 2 minutes longer. Remove from range, add vanilla and coconut. Cool, then pour into a previously baked pie shell. Cover top with meringue.

Meringue for pie:
1: Use, usually, 3 egg whites to cover a 9-in. pie
2: Use 2 level tablespoons granulated sugar to each egg
3: Beat egg whites stiff. They should be glossy on top, and when you invert the bowl they should remain in place.
4: Fold in the sugar gradually
5: Cover pie
6: Bake at 350 for 18 minutes

  • Eu tentei pegar as medidas, mas não consegui. Qual é a quantidade das gemas de ovos, leite, farinha, sal, açucar, coco e outros? Gostei da forma de você a receita.

  • Diatammy, I think you went off course by putting a watch in the bottom of your pie!

    I don't know what you really meant by ' watch at the bottom of the pie,' but it sounds like you either didn't bake it long enough, so the inside didn't have time to cook, or you baked it at too high a temperature. So the outside baked quickly but not the inside.

    But at least you gave it some serious effort and your next pie will be better! Good luck!
