【材料】:蝦仁6兩、板豆腐1塊、肥肉1兩、蛋1個、胡蘿蔔1段、香菇2朵、綠花椰菜1棵、蔥少許、薑少許、太白粉1大匙、鹽1/3小匙、胡椒粉1/6小匙
【做法】:
1、將胡蘿蔔切絲,香菇取黑色部分切絲。
2、再把蝦仁拍成泥,加入肥肉混合拌均勻。
3、.將豆腐去老皮壓成泥,將蝦泥、肥肉、蛋白、胡椒粉、鹽、太白粉加入豆腐泥中拌勻,再加適量的酒拌勻。
4、在湯匙上抹少許的油,取適量的蝦泥放到湯匙上,手沾水將蝦泥抹成半圓狀。
5、將胡蘿蔔絲、香菇絲平行的擺在蝦泥上。
6、起一鍋,待水滾後放入花椰菜川燙,取出後,加入少許的鹽調味。
7、接著將蝦泥,放入鍋中蒸7-8分鐘即可擺盤。
8、在鍋中放入水、鹽、胡椒粉,再加入太白粉、香油拌勻即成玻璃芡汁。
9、將玻璃芡汁淋在蝦球上,即完成了琵琶蝦。
