Everyone can attest that fresh ingredients are ideal for almost any dish. To add fresh flavor, when you don't have fresh ingredients on-hand, use those flavorful scraps when you're preparing your next vegetable dish. Carrot peels (or any vegetable peel!), celery leaves, outer onion layers, garlic minces, etc. all make perfect flavoring for your stocks base. Combine and toss them in a freezer bag and let them sit in your freezer until your next meal needs additional flavoring. The freezing process seals the flavorings and its convenient enough to add as you need.
