For The Crust
1 1/4 cups graham-cracker crumbs (from 10 whole crackers)
1/4 cup sugar
4 tablespoons unsalted butter, melted in the microwave

For The Filling
2 1/2 packages (8 ounces each) bar cream cheese (room tempt.) OR 1LB 3OZ on a food scale
1/2 cup and 1 1/2 tablespoon of sugar OR 4oz
2 tablespoons all-purpose flour
1 cup canned pumpkin puree
2 tablespoons pumpkin-pie spice
1 teaspoon vanilla extract
Pinch of salt
3 large eggs, room temperature, minus 1teaspoon OR 141 grams of egg
1 egg yolk OR 14grams of egg yolk
1/3 cup of room tempt. heavy cream OR 2.5 oz
