Matt Sweeney barks out directions to his crew as they load a pig into a pit. The pig is being cooked in the ground at the Pleasanton Fairways golf course for John Reding's birthday party.
hmmm, you guys do it a little different then we do. We lay the chicken wire down then a bed of corn husks and other vegetation. then after the prep work you wrap the pig with the chicken wire....none of the pig is touching the ground (dirt). no water is used you just cover the pig with wet burlap then put roofing tin over the hole and cover the tin with 8 inches of soil.....12 hours Wala.....
We learned from a friend that grew up in Hawaii....peace!
You have to place the pig above a big metal vessel with water (and other stuff like garlic, onion, rosemary, green peeper, etc..), you can use a grill in the top of such vessel to place the pig.
Water with the other stuff will provide hot vapor (moist with nice smell) necessary to cook the pig and give that "tenderness" once is done. Other wise it will cook dry......

hispanic people cook beef heads almost the same way but instead of tea leaves we use cactus it keeps the heads moist
