GREAT QUESTIONS! Cooking low and slow is best not just for ground turkey but because we are using olive oil which is best used at a low heat (otherwise it turns into a 'bad fat'). Cooking any poultry a bit longer is always best to reduce any risk of bacteria. The beans can be bought in a bag and placed in water overnight to soften. Just drain and use according to recipe. If you use canned beans, you can rinse them which helps to reduce the sodium as well. Thanks for supporting the show!

Is it important to cook the turkey at a low heat? Is there a difference between cooking it at a lower or higher heat?
Also, I'm assuming that the beans were canned...was anything else canned? If so, how do you make sure that the sodium levels stay low enough to stay healthy?
