The application was developed using Fingertapps rather than WPF. Fingertapps is a multi-touch applications framework that will run on Windows (as is happening in this demo) but also on Mac OS X and Linux too. It's also a lot less resource hungry compared with WPF, but that probably isn't very surprising ;-).
