Chashu Ramen is currently enjoying a lot of popularity in Singapore. In the fourth part of our Japanese Cooking Series, Chef Tom shows us a simple way of making Chashu Ramen at home.

If you don't have a pressure cooker, just cover the meat with water (as opposed to halfway for the pressure cooker way) and cook on medium heat for 1.5 hours.

  • any recipe fr the stock?

  • Hi Pissa2, watch our video "ieat learns to cook Miso Soup". At 1.53, there is a closeup of the Dashi stock that we use. It's an instant mix that chef Tom swears by. If you are in Singapore, you can get the stock at Meidia-ya supermarket at Liang Court.

    Thanks for watching!

  • @Culverin wow u talk like an expert lols

  • horrible accent

  • fyi, sealing in the juices is a myth.

What you want is to brown to cause a maillard reaction for flavor.

Sealing in the juices is just bad teaching handed down through the last 2 generations.
