  • Normally when a salmon's meat is white it means that they are nearing the end of their life cycle and their value as table fair is gone. White kings are different. They are in the prime of their life and posses a super high concentration of natural fats and oils in their meat which enhances their already stellar natural flavor as well as opening up new options in how to prepare them for the table. As such they command a premium at the fish market and the restaurant.
