With Pete, I would guess that he's cuing the motion he wants by waving his arms over his head, and then moving them to his head (when he says " ... in your mind") and then reinforces this with the audience by having Pete stand with his fingers in his ears (which is obviously a bit of business, and not really meant to hide whatever it is he says to the crowd, which is clearly irrelevant fluff).
