Onion garlic AND Asafoetida??
I follow a satvic diet and use asafoetida as an onion/garlic substitute. if you cook with all three a bottle of asafoetida must last a million years!! :-p

i love this recipe...the asafoetida adds a good flavour to the eggplant dish...one shouldn't leave this out!

Thanks for the eggplant tips. I don't know if I've ever baked a whole eggplant before. I usually chop it up first. I just posted a video response of a healthy vegan balsamic roasted eggplant recipe that I recently put together.
you can also make tiny slices in the eggplant to stuff the garlic and a lot of fresh chillie peppers in it. Sprinkle with a bit salt en wrap it in foil. Heat it above a flame on one of your pits and let it burn til it becomes very soft. Open your foil, mash the whole thing with some tiny sliced fresh raw onions together and you have yourself a nice hot en spicy simple roasted eggplant chutney.

Do you not need to poke the eggplant a few times before putting it in the oven?
Could we say that this is like an South Asian version of baba ganoush?
Would this be like a curry with rice, or like a chutney as a condiment or a dip?

No, poking the eggplant is not necessary and it'll prevent the juices from flowing out. Guess it could be a different version of baba ganoush. It can be eaten with chapati or paratha or rice, though it is not very "saucy".
