@ShowMeTheCurry aren't you supposed to add methi leaves at the end of the cooking processes. Almost as seasoning.

Methi leaves are also called Fenugreek leaves. Fenugreek comes in two forms - leaves and seeds. The seeds are also used in Indian cooking, usually in the seasoning. The leaves are available fresh or dried. Though both leaves and seeds have a unique bitter, but flavorful taste, the leaves are considerably less bitter than the seeds.
