froise groise is bullshit, traditional is one cut of meat, the fillet mignon, then mushrooms cut thin and browned off, at the end of cooking your mushrooms about 1 minute before theyre done its good to use worcestershire sauce about a table spoon and cook it off, the amami in it brings out the flavour profiles more, plus line the pastry with thin creps to soak up any excess juice, cover the beef in english mustard for heat and bite and wrap carefully in pastry. this guys full of crap,
