I'm on the 1st generation touch (firmware 2.2.1, works for 2.2 as well) and a windows computer.
Here are the steps:
Before you restore in itunes open cydia and install AptBackup.
Run AptBackup and hit Backup.
Plug into PC and let it backup files and restore.
After restore and jailbreaking (see my other videos) open cydia again and install AptBackup.
Return to springboard.
Run AptBackup and hit Restore.
Your ipod will reboot and all your jailbroken apps will be back!

I have a quick question, when it is done restoring on aptbackup do we close the app then plug in and hit update? After it updates re-jailbreak then go into cydia and then re-download it and restore it? Is that the right and the right process.
