The "rhizome" is known as Krachai or Grachai or various spellings like that. It is available frozen or jarred in the US. Would recommend the frozen variety for best flavor.

in your Somlor Machoo Krueng Spareribs video your lemongrass past was green. is there a difference in this paste than the one you used in the other video

@klumzi Hi! The only difference was whether I put a lot of dried big chilis when I'm grinding it...I usually like mines red.
