@chefcousin Good luck but can you keep a Vita-Prep going for 20 minutes? I realize they're built to run cooler and longer than those for home use (I've been a Vitamix owner since 1988, lest you imagine I'm a rookie). Also, I don't know that you could keep the heat high enough although I imagine adding the hot syrup would help.
Great demo... unfortunately unlees you buy a thermomix from France or Canada, they don't really sale them in the U.S.A. and even a used one is around 800-1000 dollars on ebay... still going to put it on my "wish list" along with a pacojet and a professional vacuum sealer. I'm still going to try and make this souffle with a vita-prep blender and thermocouple thermometer and an induction burner. wish me luck : )
By the way, redrightbear - the advantages for the home cook are so huge. I don't know which country you're in, but Google to find thermomix in your country (unless you're in USA, in which case go to Canada site). That will tell you more about it. There's also a demo by the Canadian distributors here on You tube.

what does the sugar syrup do to the pear mix. Surely you should add the sugar syrup to the meringue to cook it out (like an italian meringue). ?????

Great video, thanks. Apart from not having to stir while mixing are there many big advantages for a home cook ? I expect there is less washing up.
