How about the move at 0:18 ?

It's a counter that everyone has. Back and L1 will make you flash red, back and L2 will make you flash blue. Red parries square attacks while blue parries triangle attacks. If you push forward instead of back and L1 for instance you'll repel the attack pushing them off balance but you won't get the cool counter animation.

how can I use this move in 0:23 and 0:39?

The first move can only be done if they're lying on their stomach with their feet to you. Press forward back , circle. Other characters have similar attacks like this (Gerelt, Kappah, June). The second attack is just hitting down up (or is it just up?) and attack after you get up. It looked different maybe because Gore was huge but you see the cpu do it all the time.
