don't stir it because
if you do you will knock out air from those egg whites

Why do you first mix the cream with 1/3 of the egg whites and then with the rest of them and not everything at one time? What difference does it make?

@Aspro4 This is what was said on the recipe. I just followed the instruction. You may mix them all at once if you want to try the difference. Thanks
