This is a very healthy soup made from awesome ingredients, a must try:
Ingredients:
1 Organic Fryer Chicken (4lbs)
5 Large Carrots peeled and chopped
2 Large Onions peeled and chopped
1lb of Fresh Kale de-spined and chopped
2 Large Butternut Squash peeled and cubed
4 tsp salt
Instructions:
Rinse chicken and place in stock pot with water, bring to boil, cover and simmer for about one hour or until nice and tender. Remove chicken, strain broth and place broth back in stock pot. Add cut veggies to stock and bring back to boil, allow simmer for 25 minutes. Remove about six - eight cups of boiled veggies and blend until smooth, add back to stock. When the chicken has cooled, remove the meat from bones and discard skin. Add chicken meat to stock and season to taste. I found about 4 tsp of salt is sufficient.
