You could never ever play with a touchscreen anything close to a full track. It's not to do with the technology it's because touchscreens are smooth flat surfaces.
Drums for example have bounce, grip and continuation of sound. Keyboards have resistance, aftertouch, weight, springback and much more. This tech for music is failing and will always fail. I would love for it to work but you are on to a looser here.
