It all depends, it is said that the two strongest parts are as you said over the wings and the very rear seats. In many past aircraft incidents those are the parts that stay intact. Though it is much more likely that you'll go up in flames over the wings as you are sitting directly on top of the fuel tanks.
Yeah, in a crash fuel leaks and gets everywhere. When fire breaks out while the plane is still in motion, those seated behind the wings are usually worst hit.

When the fuselage breaks up on water, the tail section usually sinks pretty fast. Whereas, the flat surface area of the wings keep that section afloat for longer, giving you a chance to get out when most people are drowning.
The 767 doesn't have a dedicated crew rest compartment so they just cordon of a few seats. Its all part of FAA rules on flight & duty time for cabin attendants.
