  • Thanks healthyitaliancook! Yes, I definitely like my gnocci more starchy and firm, and you are right that too many restaurants have very very mushy versions. I will try your freezing method next time I make them.

  • What kind of sauce? I have never had those.

  • You could use any sauce, really! I usually just use a red sauce when I make it at home, but I've eaten it in restaurants with garlic oil, browned butter, cheese,or pesto sauces. It's my favorite pasta!

  • I hate the way yanks pronounce gnocchi

  • after you make the gnocchi freeze them first and then place them in the boiling water trust me this is my favorite dish and after living in italy i have aquired the correct taste for eating this amazing food. after i have tried eating it in many resturants here in america it always so soft and musshy, not the correct way should be more fermor and the freezing process helps with this.
