oishii! delicious! Do you have to use the mirin? I'm going to make this for a friend, but he is t-total (doesn't like alcohol).

Mirin is a sweetner. Try white grape juice with a dash of lemon or just some brown sugar.

I wonder, do you think this would work with tofu or would the tofu have to be fried in order to soak in the flavor?

Try atsuage or coating firm tofu in potato starch and frying it. Should be good.
