I just wanted to say that this snotty elitist way of frying an egg is fine but totally a waste of time for "good" fried eggs.
First, you do NOT need a "brown" egg.
Egss are eggs. "Naturalists" or "organic" pushers would have you believe that "white" eggs are...bad.
The color of the egg has to do with the feather coloration of the chicken...that is all. Brown, tan, speckled or white, ALL eggs are fine & nutritious.
