The galette complète is the traditional savoury crêpe with ham, cheese and egg. The egg yolk is cooked as it is served as a take-away. Flo uses the traditional recipe for the galette base, including a gluten-free buckwheat flour, and the recipe is from his home region of Bretagne, where the crêpe and galette originated.
