Burdock ("Arctium lappa") is well known for its annoying burs that stick to everything but should really be remembered for its tasty edible root.

    I've never eaten the leaves -- they are bitter. Some people eat the stems of the leaves but their bitter skin has to be scraped off. Then they can be chopped & boiled as a vegetable. It's best to use young ones as older ones can be quite stringy. I haven't tried these;but I've tried the plant's main stems, peeling off the outer skin & then boiling them. But after peeling them, my fingers were covered with a brown stain-- that might happen with the leaf stems.

  • I watched your 2 burdock videos--i'm surprised you were able to get a root out with such a small tool. I always have to use a big shovel!

    I met Linda Runyon years ago when she lived in Arizona--a sweet lady.She's written several books. I've never tried the buds but if i did I'd probably try them when they were much younger & tightly closed.I like the roots best. I just used some along with a few Jerusalem artichoke tubers and other root veggies for a "farewell to winter" stir fry.Good luck -B

  • yes the supermarket kind are definitely easier to deal with! Tho' if I have to dig for them I get my son do the work (as he did in the video). He doesn't seem to mind...--Blanche

  • One of my favorites, Burdock. You are a much better cook than I am, but I have a burdock video on my channel too. Thanks for the recipes.
