Making gluten-free baklava with hand rolled GF filo.

Dough recipe: 1-1/3 cup warm water 1 tablespoon sugar 1 teaspoon dry yeast Proof the yeast, combine with 2 eggs 3-1/2 cups Jules All Purpose GF flour Set aside for one hour in a warm spot

Baklava filling: 2 cups chopped pecans 2 cups chopped walnuts 1 cup chopped almond 1 cup sugar 1 tablespoon ground cinnamon 1 teaspoon ground clove

Syrup: 3 cups sugar 1-1/2 cup water 1/2 cup brandy ( I prefer Metaxa 7-star) 3 tablespoons honey 1 slice of lemon 2 cinnamon sticks in pieces

For the musically inclined, the background music is a classical guitar version of J.S. Bach's Chaconne from the Second Violin Partita

  • You didn't specify baking time or temperature.

    Bake at 325-F for 40 to 50 minutes until top is golden brown.

  • This is an answer to prayer. My favorite dessert is baklava, and I've been missing this most middle eastern of desserts. I send you a virtual hug ((((( ___)))))))). I'm definitely going to make this. THANK YOU.

  • dnworks; It's a very bad idea to press the filo dough with that metal tools, you are just ruining the individual layers. Ideally you want to see, when the baklava is done, each of every single layer. If you press it like that you could just take one pieace of dough and put the nuts on it.

  • @leviathan787 ... Congratulations on you success! You said it's picture perfect, you didn't say what you think of the taste. It's so funny, several years back I made and sold it to folks in the celiac community. People asked how to make it and I said it was very time consuming and I wouldn't recommend trying it. People accused me of trying to 'corner the market, for GF baklava! So, I gave up and did the video ... bravo for trying it.
