I tried to make my own Lemon LARA bars because I didn't want to spend $2 per bar. These are raw, soy-free, gluten-free, vegan, and 100% delicious! It only took me about 15 minutes to make. The texture is pretty much the same as LARA bars.
Ingredients: 1/2 cup pitted medjool dates 1/2 cup almonds grated zest of 1 lemon (I used the Hamilton Beach 175 watt Personal Blender)
use a food processor or personal blender to separately chop up nuts and dates well. Use your hands to mix and combine with lemon zest. Cut into bars, wrap in parchment paper or foil, and cling wrap. Enjoy!
*I think I used a 1:1 ratio of nuts and dates. I didn't really measure... ^_^;
Mine are slightly moister than LARA bars, so you could dehydrate yours a little or bake at a very low temperature for an hour or whatever to make it a little drier.

hello again! i have a question...my blender recently died on me..and in need of a new one.. hows your hamilton blender? does it crush ice well? i looked online and its about 18 bucks in target...sounds too good to be true. but sounds appealing as well! anyway........i'm rambling. thanks for your help
The Hamilton Beach blender is pretty good; It does crush ice, frozen fruit, nuts, dates... just about everything! For the dates and nuts, I would recommend that you "pulse" them first, before holding down the button to chop/process them.
I've had my blender for 1 year, and it's still going strong! As with all personal blenders, don't hold down the button for longer than 1 minute at a time because the motor may over-heat. But if you hold for 1 min & pause for a few seconds it's fine.
