Oh my, your Amiga is used as a monitor stand, how embarrassing :p
I'm really impressed with SymbOS, and I've been trying to get my hands on an Amstrad CPC for years but they're not as easy to come by in my area as other older 8bit computers.

Is it possible to program an X68000 or MSX Turbo R to do convincing sound/gfx demos like on Amiga, C64, Spectrum/Pentagon (beefed up Russian ZX Spectrum clone), Atari ST/Falcon030/TT, etc.?

Any chance to get an Amstrad PLUS specific SymbOs ?
Features such as Hardwired sprites, DMA sounds and so on would be nice.
Any chance of SymbOS running on a ZX Spectrum? :)

Did you already try Doors for the Spectrum (see "Weblinks", "Doors" on the SymbOS website, seems, that I can't post urls here...)?
Regarding a SymbOS-port for the ZX Spectrum: Because of the memory banking requirements it would only be possible on the +3 as far as I know.
