Well, it seems that they're only sitting down with certain well known directors of the genre and that's why you're only seeing certain films...so they can give their own commentary on it. Also, Suspiria is an Italian film, so it wouldn't fit in well with a documentary called the American Nightmare.
The Exorcist (s.p.?), The Omen and Jaws are studio films. The Exorcist, is, in the mind of many, a "reactionary" film, suggesting the clock be rolled back on the 1960s (the first pebble in the path to Ronald Reagan?) These are INDEPENDENT films, not sanctioned by the big studios (but now, amazingly, worshipped and remade by the big studios!) And Suspiria, of course, is an Italian film.
