The reason your infernal's damage was poor on a single target is because it would be used in a multi-target situation dealing AoE damage. Doomguard is used in single target situations.

would be a little bit OP if you could summon an infernal and then a doomguard, whilst simultaneously having your original pet out.

You'll still regain a soul shard if the target dies while casting drain soul.
