To be fair, the patron kept pressing him about a particularly strong drink he made, from a long time ago. The bartender was there to promote his new album "S.A.M.E." (Serving All My Enemies), not talk about the controversial drink. He didn't mean to rip his shirt off and break the glass, but he's just an emotional man with a lot of baggage.
