My great-grandmother used to make this for us as one of her major specialities; she and her husband were from rural Italy, in the most traditional province for food. Both my mother and grandmother made it. Enjoy.

1/3 lb. Sweet Italian sausage
1 lb. ground beef
1 tsp. salt
1-2 tsp. pepper
1 large onion, or several smaller ones
2-4 carrots
1/2-1 green pepper
celery leaves from about one stalk (opt.)
1 tsp. anise (not fennel! I found out -- Be warned! Strong stuff!) seed or more (opt.)
1-2 Tbsps. oregano flakes, or 1/4 cup fresh oregano leaves, or more on either
1-2 Tbsps. granulated garlic (not powder)
1 28-oz. can tomato sauce or tomato puree
1 28-oz. can diced tomatoes
1 small 6 oz. can tomato paste
1/2-1 cup water
3-5 bay leaves
1/2 tsp. salt
1 tsp. pepper

One trick they use in Italy, and is common, they take about 1-2 tablespoons of butter, melt it in a pan, add about a ladle of sauce per serving, and cook the noodles in it briefly, in addition to the mentioned, salt, pepper, Parmesan cheese and olive oil on top.

  • is this a stew? anise and fennel is not the same thing. never heard of green peppers in a spaghetti sauce. basil, not oregano. oregano in salads yes. to each his own
