I like all these chef know it alls here. The thing is people have different tastes, as a chef, you have to respect each persons taste. Yes I agree, anything over medium isn't good, but some people just don't like rare.

Why do people come on YouTube videos and complain that rare meat is raw If you don't like rare, then get a cheap cut and cook it to well done. Lean cuts like this shouldn't be cooked to well done since the meat fibers become tough. Conversely, cheap cuts need to be cooked well done to break down the connective tissues.
And that red juice in the video is not blood because it is 'clear'. You can see the cutting board through it.
