In the first game, he was white. It wasn't until the sequel when he became pink.

Sakurai and Miyamoto had an argument over Kirby's color. Miyamoto wanted a yellow Kirby, and Sakurai wanted pink. Sakurai won, obviously, but the feud was still going on when this game was released in the US, so NOA, confused, made him white.
