Yes, bread is technically "processed food." However, along with greater scale comes the addition of molecules that you certainly wouldn't want in your kitchen. This is why we used the term "processed food" as shorthand for *artificially modified* batch-made food with added emulsifiers, flavorants, preservatives, etc, many of which have unknown effects on those who consume them.
And yeah by the way... Tokyo is the #1 or 2 most populous city in the world. Left that one out somehow.
