The Grapple Guardian is, in my opinion, one of the coolest bosses of the Metroid series. This boss is the only one where you actually have to fight it in order to get the Grapple Beam, one of the best power-ups. So... this boss is just awesome. But it's not too hard to beat it.
The Grapple Guardian CAN'T be shot in the eye except if you scan it so it'll adjust your reticle and target its main weak point. You must shoot the eye until it gets paralyzed. Then it'll protect its front with the Grapple Beam power so you'll have to attack its back. The main trick : if it throws the Grapple Beam on the pole, it'll attach and it'll be paralyzed, trying to free itself. At this moment, go behind the Guardian and shoot a Super Missile. If the Grapple pulls the Guardian toward the pole, it'll be paralyzed and some items will drop so you can recover ammunitions and energy.
During Phase 2, its shell will be broken like all Grenchlers (it's a Dark Alpha Grenchler by the way). It'll use the Grapple Beam Power to protect its back once more. Your job is still the same but when it becomes paralyzed, shoot missiles or, if you're quick enough, a Super Missile. The best weapon to use is your Light Beam. Next, it'll use the Grapple Beam Power to protect its whole body so you'll have to dodge its Grapple Beam.
Once you're done with the Grapple Guardian, you'll recover the Grapple Beam. The best thing about this "new" Grapple, you'll be able to shoot, change visor (except Scan Visor) and beam while balancing on a Grapple Point.
