@germangirlwithcurls This recipe takes substitutions very well. I think it would work fabulously with xylitol, and molasses would even work with the flavors if you wanted to substitute maybe 1/8-1/4 cup for part of the sugar. Good luck with your experimenting!

Thanks for sharing this yummy cake. :-) I just went GF a month ago, also sugar-free (well, at least free of most processed sugars), and 5 extra lbs. of weight literally melted off me in about 10 days. And I was experimenting with baked goods, so I was eating lots of apple crisp and muffins! My body has been thankful to me...no more headaches after I eat! I am wondering however, do you think xylitol could be substituted in this cake, or maybe with part molasses?

great recipe- my nephew was just diagnosed with celiac about 3 days ago and his birthday is in 6 days- all he wanted was a carrot cake and now we can make a nice gf one!
