The lobster is well dead.... its primitive nervous system will still function, which is why it twitches. In addition lobsters have very similar nervous systems to many insects- they do not feel pain the same way mammals do.

@TheJDub1228 It isn't humiliating, it's just how they present their dish. This is not different from a piece of chicken laying on a plate. Any thing you eat is a living thing. Even if you eat plants that is still a living thing. This is just how life goes, some must die for other to survive. FYI Japan is more civilized then any other countries.
